At Fazenda Santa Monica, Jean has introduced experimental processing methods — like this anaerobic fermentation — to push flavour boundaries while maintaining Brazil’s renowned consistency.

  • Roaster's Notes

    Located in the Minas Gerais region — one of Brazil’s most renowned coffee-growing areas known for its consistent climate, fertile soils, and ideal altitude for specialty production.

    This process involves placing freshly harvested cherries in sealed tanks with no oxygen, allowing controlled fermentation for 60 hours. The anaerobic environment slows the fermentation down, encouraging the development of bold, fruit-forward flavours and complexity in the cup.

    The extended fermentation time adds depth and nuance, balancing Brazil’s natural chocolate and nut notes with unexpected tropical or spiced undertones, depending on how the fermentation develops.
